We work with individual small farms to supply all of our kitchen needs. Cutting out the distribution middle man allows us to have daily conversations with the farmer to develop our menu and purchase directly. We also specialize in offal cuts and sustainable meats from animals such as rabbit and goat, which increase farmer sales per pound and encourage raising of inherently sustainable animals that are not currently in the food chain. Our cafe and kitchen staff provide free farm labor by assisting in slaughters and harvests in exchange for an educational experience and personal and professional growth.
