Now that we know that much of our immune and nervous systems actually live in our digestive tract, and that’s also where herbalists administer most of our potions, let’s investigate what’s going on in there. We’ll cover a little human physiology first, and then we’ll get into how our microbes feed us, protect us, communicate with us and how we can help them help us with herbs and diet. Class will finish up with a hands-on lactofermented vegetable demonstration and everyone will go home with a jar!
