Major menu overhaul at The Skinny Pancake on March 1st

The Skinny Pancake announces major menu overall at all outlets

On Thursday March 1st, The Skinny Pancake will be unveiling a major menu overhaul at their 60 Lake Street Burlington and University of Vermont locations. Other outlets will see similar changes in the weeks and months to follow.

“In considering this menu overhaul, we started by defining two guiding principles: 1. Every bite of every product must taste OMG always and 2. We continue to prove that local food can be affordable and a good value,” explains founder / owner Benjy Adler.

The Flagship Skinny Pancake location at 60 Lake St in Burlington will add 15 new menu items, retire 12 items and improve 10 existing entrees. With a total of 37 changes to their menu in all, more than half the menu will have been changed or improved by March 1st.

“With so many changes”, Adler explains, “The team in the kitchen is warming up by featuring the new menu items as specials throughout the month of February.”

New to the menu are 4 savory crepes, 3 dessert crepes, 3 breakfast items, 2 salads, 2 appetizers and a new panini. “In keeping with our mission, we dug deeper into sourcing locally. We will be featuring VT blueberries on our menu year round now and we’re finally joining the movement to celebrate organic VT kale in all its glory.” Adler explains that the new menu will also feature an improved vegan batter and two new vegan entrees.

Adler is particularly excited about a new collaboration with Screamin’ Ridge Farm, who will be providing The Skinny Pancake with chicken gravy made from local chicken stock: “We cook off a whole lot of chicken, but what happens to the bones? We have always thought about closing that loop in spirit by making a VT-based chicken gravy for our traditional poutine. We just didn’t have the capacity to do it ourselves. We learned about the full extent of Joe Buley’s operation during the making of The Local Motive and were thrilled to find out he could localize this popular gravy for us.”

“We are saying goodbye to a few old friends who are currently enjoying their final victory lap this month,” Adler explains. Amongst the items being retired from the menu are the Pooh Bear, Lemon Classic, Spinach and Feta, Chop Salad, Toasted Greek Salad and the Pure & Simple. “If you wish to see them off, their receiving hours are from open to close through to the end of February,” Adler explains.
